Smoked Cheddar Muffins Recipe

These cheesy muffins are a perfect treat for brunch. To get a jump start on prep, mix the dry ingredients the night before. Shred the cheese, cover, and refrigerate. Line up the toppings and you're all set to bake in the morning.
Ingredients
- 1 cup all-purpose flour
- 1 cup yellow cornmeal
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1/4 to 1/2 teaspoon ground red pepper
- 2 eggs
- 1 cup milk
- 1/4 cup margarine or butter, melted
- 1 cup shredded smoked cheddar cheese (4 ounces)
- Desired toppings (such as sunflower seed, poppy seed, sesame seed, pine nuts, thin strips of roasted
- In a medium mixing bowl stir together flour, cornmeal, sugar, baking powder, salt, and red pepper. In another bowl beat together eggs, milk, and melted margarine or butter. Add to flour mixture. Add the 1 cup shredded cheese and stir just until batter is smooth (do not overmix).
- Spoon batter into greased muffin cups, filling cups almost full. Top with desired toppings. Bake in a 425 degree F oven for 12 to 15 minutes or until golden brown. Let cool in pan for 5 minutes. Remove from muffin cups and serve warm. Makes 12.
