Bread salad is a tasty way to use day-old bread. Serve this low-calorie, vegetable-rich salad with fresh cheeses for a fast and easy supper.
Ingredients
- 1/4 cup olive oil
- 3 tablespoons red wine vinegar
- 3 tablespoons snipped fresh oregano
- 1/2 teaspoon sugar
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/4 pound whole wheat sourdough or other country-style bread, cut into 1-1/2-inch cubes
- 1/2 of a 10-ounce package torn Italian-style mixed salad greens (about 5 cups)
- 1 medium tomato, cut into thin wedges
- 1/4 cup halved yellow cherry tomatoes or yellow sweet pepper, cut into 1/2-inch squares
- 1/2 cup Greek or other olives
- In a screw-top jar combine oil, vinegar, oregano, sugar, salt, and pepper. Cover tightly and shake well.
- In a large salad bowl combine bread cubes, torn Italian-style mixed greens, tomato wedges, cherry tomatoes or sweet pepper, and olives. Add dressing; toss and serve. Makes 6 side-dish servings.
