Tomato Saute Recipe

You'll love this easy side dish with fresh tomato flavor, savory thyme, and mild mozzarella. Best of all, the recipe can be prepared in just 30 minutes.
Ingredients
- 2-1/2 cups whole red grape tomatoes, yellow pear tomatoes, cherry tomatoes, and/or small yellow tomatoes
- 1 Tbsp. olive oil
- 1/4 cup finely chopped onion
- 1 clove garlic, minced
- 1 tsp. snipped fresh thyme
- 1/4 tsp. salt
- 1/4 tsp. black pepper
- 2 oz. fresh mozzarella, cut into 1/2-inch cubes
- Halve the grape, pear, and/or cherry tomatoes or cut small yellow tomatoes into wedges; set aside. Place a large skillet on grill side burner. In skillet, heat oil over medium heat for 2 minutes. Add onion, garlic, and thyme; cook and stir for 2 to 3 minutes or until onion is tender.
- Add tomatoes, salt, and pepper. Cook and stir for 1 to 2 minutes or until tomatoes are just warmed. Remove from heat. Stir in mozzarella cheese. Makes 4 servings.
