Curried Turkey With Rice

Ground turkey is simmered in a curry tomato sauce and served over rice in this flavorful low-fat recipe.
Ingredients
- 2 tsp olive oil
- 12 ounces lean all-white-meat ground turkey
- 1 tsp curry powder
- 1/2 cup canned diced tomatoes, drained
- Cooked basmati or jasmine rice
- Reduced-fat plain yogurt
- Snipped fresh cilantro
- Rub oil in a heavy skillet. Heat skillet to medium-high heat.
- Brown turkey (5 to 7 minutes); stir in curry powder and diced tomatoes.
- Simmer 3 to 5 minutes more; serve over cooked rice.
- Top with plain yogurt and fresh cilantro.
