Fresh fruit and mushrooms add color and flavor to the rice in this easy side dish. It pairs well with chicken, turkey, or fish.
Ingredients
- 1-1/2 cups sliced mushrooms (4 ounces)
- 1 cup sliced celery (2 stalks)
- 1 cup finely chopped onion (1 large)
- 1 tablespoon vegetable oil
- 1 14-ounce can chicken broth
- 2/3 cup water
- 1 6-ounce package long grain and wild rice mix
- 2 medium oranges, peeled and sectioned, or one 11-ounce can mandarin orange sections, drained
- 1/2 cup chopped toasted walnuts
- In a large saucepan, cook mushrooms, celery, and onion in hot oil about 5 minutes or until tender. Add broth and water; bring to boiling. Stir in rice mix and seasoning packet; reduce heat. Simmer, covered, for 25 to 30 minutes or until rice is tender. Remove from heat. Gently stir in orange sections and walnuts. Makes 6 servings.
