Choco Chip-Applesauce Muffins

Whip up a batch of muffins with cereal, applesauce and mini chips.

Ingredients
  • 2 cups Cheerios® cereal
  • 1 1/4 cups Gold Medal® all-purpose flour
  • 1/3 cup packed light brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 3/4 teaspoon baking soda
  • 1 cup applesauce
  • 1/3 cup milk
  • 3 tablespoons vegetable oil
  • 1 egg
  • 1/2 cup miniature chocolate chips
Directions
  • Heat oven to 400 degrees F. Place paper baking cups in each of 12 regular-size muffin cups or spray bottoms only with cooking spray.
  • Place cereal in resealable food-storage plastic bag; seal bag. Using rolling pin, crush cereal; pour into large bowl. Add flour, brown sugar, baking powder, cinnamon and baking soda; mix well. Stir in remaining ingredients just until moistened. Divide batter evenly among muffin cups.
  • Bake 18 to 22 minutes or until golden brown. Immediately remove from muffin cups. Cool 5 minutes before serving.
