Two-Pepper Burgers

Seasoned beef patties are grilled, then topped with cheese and smoky mayo for these spicy burgers.
Ingredients
- 1/2 cup mayonnaise or salad dressing
- 1/2 to 1 chipotle pepper in adobo sauce, finely chopped
- 1/3 cup finely chopped onion
- 3 to 5 fresh jalapeno peppers, seeded and finely chopped
- 4 cloves garlic, minced
- 2 teaspoons Cajun or Creole seasoning
- 1-1/2 pound ground beef
- 4 ounces Monterey Jack cheese, sliced
- 6 hamburger buns, split and toasted
- Combine mayonnaise and chipotle pepper. Cover and chill until serving time. In a large bowl combine chopped onion, jalapeno, garlic, and Cajun seasoning. Add beef; mix well. Shape into six 3/4-inch patties.
- Place patties on the unheated rack of a broiler pan. Broil 4 to 5 inches from heat for 12 to 14 minutes or until done (160 degree F), turning once. Top with cheese slices; broil 30 seconds more or until cheese slices are melted. Serve on buns with mayonnaise-pepper mixture. Makes 6 servings.
- Wear plastic gloves when chopping hot peppers.
