Coriander Turkey Breast Recipe

Rubbing on a mixture of coriander, onion powder, chili powder, and ground red pepper gives this grilled turkey a pleasantly spicy flavor and a rich roasted color.
Ingredients
- 1 2- to 3-pound fresh or frozen turkey breast portion, thawed
- 2 teaspoons ground coriander
- 1/2 teaspoon onion powder
- 1/4 teaspoon chili powder
- Dash ground red pepper
- 1 tablespoon margarine
- 1 tablespoon lemon juice
- Remove skin and excess fat from turkey breast. In a small saucepan cook coriander, onion powder, chili powder, and red pepper in margarine for 1 minute. Remove from heat and stir in lemon juice. Spread spice mixture on all sides of turkey.
- In a covered grill arrange medium-hot coals around a drip pan. Test for medium heat* above the pan. Insert a meat thermometer into the thickest part of turkey breast, but not touching the bone (if present). Place turkey breast on grill rack over drip pan but not over coals. Lower grill hood. Grill 1-1/4 to 1-3/4 hours or until thermometer registers 170 degrees F. Add more coals as needed. Makes 8 servings.
