Make your own Mexi-corn with this recipe. Just mix together sweet peppers, corn, and seasonings.
Ingredients
- 3/4 cup each chopped red and green bell peppers
- 1 tablespoon canola oil
- 1-1/2 cups frozen corn
- 1/2 teaspoon chili powder
- 1/4 teaspoon salt
- 1 tablespoon fresh cilantro
- Saute red and green bell peppers in canola oil on medium heat for 3 minutes. Add frozen corn and cook 2 minutes more. Stir in chili powder, salt, and fresh cilantro.
