Picadillo Chicken Pizza

Here's a quick and easy way to use up leftover chicken or turkey.

Ingredients
  • 1 12-inch Italian bread shell (Boboli)
  • 1 cup bottled salsa
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground cumin
  • 2 cups chopped cooked chicken or turkey
  • 1/2 cup dried cranberries or raisins
  • 1/2 cup pitted green olives, coarsely chopped
  • 1/4 cup chopped red onion
  • 1 tablespoon sliced almonds
  • 1 cup shredded manchego or Monterey Jack cheese (4 ounces)
  • 1 tablespoon snipped fresh cilantro
Directions
  • Preheat oven to 400 degree F. Place bread shell on a baking sheet. In a small bowl combine salsa, cinnamon, and cumin. Spread evenly over bread shell. Top with chicken or turkey, cranberries or raisins, olives, red onion, and almonds.
  • Bake for 10 minutes. Sprinkle with manchego or Monterey Jack cheese. Bake for 5 to 7 minutes more or until pizza is heated through and cheese is melted. Sprinkle with cilantro. Cut into wedges to serve. Makes 6 main-dish servings.
