Shrimp and Shiitake Mushroom Pizza Squares

A hearty blend of shrimp, spinach, shiitake mushrooms, and pine nuts top this elegant appetizer pizza recipe.
Ingredients
- 1 16-ounce loaf frozen bread dough, thawed
- 1 egg white
- 1 tablespoon water
- 1/4 cup toasted pine nuts or slivered almonds
- Parmesan Pizza Sauce (see Recipe Center)
- 1 cup chopped fresh spinach
- 1/2 pound fresh or frozen peeled and deveined shrimp, cooked and halved lengthwise
- 1 cup sliced fresh shiitake or white mushrooms
- 1 cup shredded Swiss cheese (4 ounces)
- On a lightly floured surface, roll bread dough into a 14x10-inch rectangle. Transfer dough to a lightly greased large baking sheet. Build up edges slightly; score edges with a knife, if desired. Prick generously with a fork. Combine egg white and water; brush over dough. Bake in a 375 degree F oven for 20 to 25 minutes or until light brown.
- Stir pine nuts or almonds into Parmesan Pizza Sauce; spread over hot crust. Top with spinach, shrimp, and mushrooms. Sprinkle with Swiss cheese.
- Bake about 12 minutes more or until cheese melts and pizza is heated through. Makes 12 appetizer servings.
