Full-flavor cheeses such as cheddar and Stilton taste best at room temperature. When serving cheese as part of a dessert buffet, allow 1 ounce of cheese per serving. Apricots and honey are bonuses that pair marvelously with sharper cheeses.
Ingredients
- 1 pound white cheddar cheese
- 6 to 8 ounces Stilton or other blue cheese
- 2 tablespoons walnut halves and pieces
- 2 tablespoons chopped candied apricots
- Fresh currants or dried cranberries (optional)
- Honey (optional)
- Cut cheeses into wedges; cover with plastic wrap. Allow cheeses to stand at room temperature for 30 minutes to bring out their fullest flavors. Arrange the cheese wedges on a cake stand or plate.
- Sprinkle the cheese wedges with walnuts, candied apricot, and, if desired, currants. If desired, drizzle with honey. Makes 22 servings.
