Confetti Coleslaw Recipe

We perked up bagged coleslaw mix for this side salad by adding fresh-cut orange bell peppers and chopped cilantro.
Ingredients
- 1/2 cup well-shaken buttermilk
- 1/4 cup sour cream
- 1-1/2 tablespoons apple-cider vinegar
- 1 tablespoon sugar
- 3/4 teaspoon coarse salt
- 3/4 teaspoon fresh-ground black pepper
- 1/4 cup chopped fresh cilantro
- 1 bag (16 oz.) shredded coleslaw mix
- 2 orange bell peppers, stemmed, seeded, and cut into thin 2-inch-long strips
- Whisk together buttermilk, sour cream, vinegar, sugar, salt, pepper, and cilantro in a large serving bowl.
- Gently stir in coleslaw mix and bell peppers. Keep coleslaw chilled, covered, at least 30 minutes or until ready to serve. Makes 8 servings.
