Fruit-Walnut Bars

This sweet treat is a healthful mix of fruit and nuts.

Ingredients
  • 1/4 cup butter or margarine
  • 1-1/2 cups quick-cooking rolled oats
  • 1/4 cup packed brown sugar
  • 2 eggs, beaten
  • 1/4 cup light-colored corn syrup
  • 1/2 cup snipped pitted dates
  • 1/2 cup snipped dried apricots
  • 1/2 cup chopped walnuts
  • 1/2 teaspoon ground cinnamon
Directions
  • Heat oven to 350 degree F. Melt the butter or margarine in a 9x9x2-inch baking pan in the oven (about 6 minutes). Remove from oven. Stir oats and brown sugar into melted butter or margarine; press mixture firmly and evenly onto bottom of pan using the back of a spoon.
  • Bake for 12 minutes or until lightly brown around edges.
  • Meanwhile stir together the beaten eggs, corn syrup, dates, apricots, walnuts, and cinnamon in a large bowl, stirring well. Spoon evenly over partially baked crust. Bake 15 to 20 minutes or until center appears set. Cool completely in pan on a wire rack; cut into bars. Makes 20 bars.

  • Cover pan and store in the refrigerator up to 3 days.
