Gingery Sugar Snap Peas Recipe

This quick, low calorie vegetable side dish is slightly sweet due to a peach preserve glaze.
Ingredients
- 3 cups fresh sugar snap peas or frozen loose-pack sugar snap peas
- 1 tablespoon butter or margarine
- 1 tablespoon peach preserves
- 1 teaspoon soy sauce
- Dash ground ginger
- Dash black pepper
- Remove strings and tips from fresh peas. Cook fresh peas in a medium saucepan, covered, in a small amount of boiling salted water for 2 to 4 minutes or until crisp-tender. (Or, cook frozen peas according to package directions.) Drain well; set peas aside.
- In the same saucepan melt butter; stir in preserves, soy sauce, ginger, and pepper. Return peas to saucepan, stirring to coat. Makes 6 servings.
