Mini Gingerbread Loaves Recipe

Ingredients
What You Need
- 18 HONEY MAID Gingerbread Grahams, finely crushed (about 2-1/4 cups)
- 1/4 cup flour
- 1/4 cup granulated sugar
- 2 tsp. CALUMET Baking Powder
- 1/4 tsp. baking soda
- 1 cup fat-free milk
- 1 egg, beaten
- 2 Tbsp. honey
- 2 to 3 tsp. water, divided
- 1/2 cup powdered sugar
- Heat oven to 350 degrees F.
- Mix first 5 ingredients in medium bowl. Add milk, egg, and honey; stir just until blended. Spoon into 3 lightly greased 5-1/2x3-1/4x2-inch disposable mini loaf pans.
- Bake 30 minutes or until toothpick inserted in centers comes out clean. Cool completely.
- Add 2 teaspoons water to powdered sugar; stir until well blended. Add remaining water if necessary until desired consistency. Drizzle loaves. Let stand until glaze is firm.
- How to Easily Crush Grahams: Process grahams in food processor or blender until finely crushed.
- Special Extra: Stir 1/2 cup raisins into batter before spooning into prepared pans.
- Special Extra: This gingerbread makes a great gift to bring to a holiday party. Cool completely, then wrap in plastic wrap before placing in a holiday-themed basket or container. Or wrap in decorative holiday wrap, then tie with colorful ribbon before giving away.
