Pizza Bar for a Crowd Recipe

This works as well for a dinner party as it does for a soccer team party. Find a friendly pizzeria that will sell you some dough and half the job is done.
Ingredients
- Parchment paper
- All-purpose flour
- 1 recipe Pizza Dough (recipe follows)
- Sauces: favorite pizza sauce, barbecue sauce, olive oil
- Meats: precooked ground beef or Italian sausage, sliced pepperoni, chopped or shredded cooked chicken, sliced or chopped cooked ham, precooked chorizo sausage
- Vegetables: sliced fresh mushrooms; fresh tomatoes; sweet peppers; green, black, and/or kalamata olives; and chopped onion
- Cheeses: shredded mozzarella or sliced fresh mozzarella cheese; shredded or grated Parmesan cheese; crumbled feta cheese
- Herbs: whole or torn fresh basil leaves or dried basil, crushed; snipped fresh or dried rosemary or thyme
- Garlic: minced or coarsely chopped
- Preheat oven to 425 degrees F. From parchment paper cut 8-inch squares. Lightly sprinkle parchment with flour.
- Place divided dough on parchment pieces. Roll dough pieces in 4- to 6-inch circles. Top pizza dough with choice of sauces, meats, vegetables, cheeses, herbs, and garlic.
- Keeping pizzas on parchment, transfer to baking sheets. Bake for 15 to 20 minutes or until crust is lightly browned and cheese is melted. Makes 8 servings.
- A 1-pound loaf of bread dough or a 13.8-ounce package of refrigerated pizza dough may be substituted for homemade pizza dough. Each will yield 4 to 6 individual dough rounds depending on how thinly the dough is rolled.
- In a large mixing bowl combine 1-1/4 cups all-purpose flour, 1 package active dry yeast, and 1/2 teaspoon salt; add 1 cup warm water (120 degrees F to 130 degrees F) and 2 tablespoons cooking oil or olive oil. Beat with an electric mixer on low speed for 30 seconds, scraping bowl constantly. Beat on high speed for 3 minutes. Using a wooden spoon, stir in as much of the remaining 1-1/2 to 2 cups all-purpose flour to make a moderately stiff dough that is smooth and elastic (6 to 8 minutes total). Divide dough into 8 pieces. Cover; let rest for 10 minutes. Makes 8 mini pizzas.
