Praline Baked Apples

Because apples are low in fat and calories, allow the splurge of a scoop of butter pecan ice cream.

Ingredients
  • 1/4 cup apple juice or apple cider
  • Dash ground cinnamon
  • 2 small red baking apples
  • 2 tablespoons pecans or walnuts, coarsely chopped
  • 2 tablespoons brown sugar
  • Dash ground cinnamon
  • Vanilla low-fat frozen yogurt or ice cream (optional)
Directions
  • In a small bowl combine apple juice and dash cinnamon. Divide the mixture between two 6-ounce custard cups. Core apples; remove peel from the top of each apple. Place the apples in the custard cups.
  • Place the custard cups in a shallow baking pan. In another small bowl combine pecans, brown sugar, and dash cinnamon. Sprinkle over the apples.
  • Bake, covered, in a 350 degree oven for 30 to 40 minutes or until apples are tender. If desired, serve the baked apples with frozen yogurt.
