Ingredients
- 1 medium onion, finely chopped
- 2 to 3 tablespoons vegetable oil
- 4 cloves garlic, chopped
- 1-1/3 cups honey
- 3/4 cup ketchup
- 1/3 cup lemon juice
- 1/4 cup reduced-sodium soy sauce
- 2 tablespoons oyster sauce
- 2 teaspoons hot Asian chili paste
- 2 red sweet peppers, seeded and cut into 1-inch pieces
- 2 green sweet peppers, seeded and cut into 1-inch pieces
- 1 large red onion, peeled and cut into 1/2-inch wedges
- 3 cups Tyson® Grilled & Ready® Chicken Breast Chunks, thawed
- 1 8-ounce package rice noodles
- In a medium saucepan cook and stir chopped onion in hot oil over medium heat 5 minutes. Add garlic; cook and stir 2 minutes.
- In medium bowl whisk together honey, ketchup, lemon juice, soy sauce, oyster sauce, and chili paste. Add to onion mixture in saucepan; bring to a simmer. Simmer, uncovered, 15 minutes (you should have about 3-1/4 cups sauce). Cover and refrigerate until ready to use.
- Place sweet peppers and red onion wedges in a microwave-safe glass baking dish. Cover with plastic wrap and vent. Microwave 3 minutes.
- On six metal skewers evenly divide Grilled & Ready® Chicken Breast Chunks, peppers, and onion wedges.
- Prepare rice noodles following package directions. Drain and toss with 3/4 cup of the reserved sauce.
- Meanwhile, heat gas grill to medium hot or prepare charcoal grill with medium-hot coals.
- Liberally brush skewers with some of the remaining sauce. Grill 4 minutes per side, brushing with additional sauce as needed.
- To serve, divide noodles among six plates. Arrange skewers over noodles. Boil remaining sauce 3 minutes and serve on the side.
- If you can't find rice noodles, substitute capellini or vermicelli.
