Turkey with Tomatillo Guacamole

Lean turkey meat gets a flavor boost from spices and a simple avocado topper in this dinner recipe.

Ingredients
  • 1 2- to 3-pound fresh or frozen turkey breast portion
  • 2 teaspoons ground coriander
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon chili powder
  • Dash ground red pepper
  • 1 tablespoon margarine or butter
  • 1 tablespoon lemon juice
  • 1 recipe Tomatillo Guacamole (see recipe below)
Directions
  • Thaw turkey, if frozen. Remove skin and excess fat from turkey. In a small saucepan cook coriander, onion powder, chili powder, and red pepper in hot margarine for 1 minute. Remove from heat; stir in lemon juice. Brush over turkey. Insert a meat thermometer into the thickest part of turkey, not touching bone (if present).
  • In a grill with a cover arrange medium-hot coals around a drip pan. Test for medium heat above the pan. Place turkey on the grill rack over the drip pan. Cover and grill for 1-1/4 to 1-3/4 hours or until thermometer registers 170 degree F. Serve the turkey with Tomatillo Guacamole. Makes 8 servings.
Tomatillo Guacamole
  • In a small bowl stir together 1/2 of a small avocado, seeded, peeled, and chopped (about 1/2 cup); 2 canned tomatillos, rinsed, drained, and finely chopped (about 1/4 cup); 1 plum tomato, chopped; 1 tablespoon canned diced green chile peppers; 2 teaspoons lemon juice; and 1/8 teaspoon garlic salt.
