Nut and Honey Crunch Granola

Nuts, oats, spices, and dried fruit make up this breakfast mainstay. Layer the granola with yogurt, serve it with milk, or eat it plain.

  • 3 cups regular rolled oats
  • 1/2 cup whole almonds
  • 1/2 cup pecan halves
  • 1/2 teaspoon ground cinnamon
  • 1/4 to 1/2 teaspoon ground nutmeg
  • 1/2 cup packed brown sugar
  • 1/2 cup honey
  • 1/2 cup water
  • 1/3 cup cooking oil
  • 2 teaspoons vanilla
  • 1/3 cup snipped dried apricots
  • 1/3 cup golden raisins
  • 1/3 cup dried currants or dark raisins
  • Grease a 15x10x2-inch roasting pan and set the pan aside.
  • In a large mixing bowl, stir together the oats, almonds, pecans, cinnamon, and nutmeg. Mix well.
  • In another mixing bowl, stir together brown sugar, honey, water, oil, and vanilla. Add honey mixture to oat mixture, stirring to coat well. Spread mixture in prepared baking pan.
  • Bake in a 300 degree F oven about 1 hour or until browned and crisp, stirring every 15 minutes. Cool the granola completely in the roasting pan on a wire rack. Stir apricots, raisins, and currants into oat mixture. Store in an airtight container. Makes 6 cups.
