Balls of ice cream coated with peanuts, cereal, and candy make a fun dessert to serve at summer parties or after the game.
Ingredients
- 1-1/2 cups coarsely crushed frosted cornflakes
- 1/4 cup chopped cocktail peanuts
- 2 tablespoons miniature candy-coated semisweet chocolate pieces or miniature semisweet chocolate pieces
- 8 scoops low-fat frozen yogurt (not fat-free) or light ice cream (any flavor)
- Line a baking sheet or tray with waxed paper; set aside.
- In a shallow dish combine cornflakes, peanuts, and chocolate pieces. Roll scoops of frozen yogurt, one at a time, in cereal mixture, forming a ball and pressing cereal mixture onto sides. Place coated scoops on prepared baking sheet; cover with plastic wrap.
- Freeze until firm or up to 6 hours. To serve, place coated scoops in dessert dishes. Makes 8 servings.
