Ham Balls with Currant Glaze Recipe

Prepare the tangy sweet glaze while the ham balls bake, then spoon it over for a glistening finish.
Ingredients
- 2 beaten eggs
- 3/4 cup finely crushed graham crackers (11 or 12 squares)
- 1/2 cup chopped onion
- 1/4 cup milk
- 1 tablespoon Dijon-style mustard
- 1/4 teaspoon pepper
- 1 pound ground fully cooked ham
- 8 ounces ground pork
- Kumquats (optional)
- 1/2 cup currant jelly
- 1 tablespoon prepared horseradish
- 1 teaspoon finely shredded orange peel
- 1 tablespoon orange juice
- In a large mixing bowl combine eggs, crushed crackers, onion, milk, mustard, and pepper. Add ground ham and ground pork; mix well. Shape into 12 balls, using about 1/3 cup mixture for each ball. Place ham balls in a lightly greased 2-quart rectangular baking dish.
- Bake ham balls, uncovered, in a 350 degree F oven about 45 minutes or until juices run clear.
- Meanwhile, for Currant Glaze, in a small saucepan combine currant jelly, horseradish, orange peel, and orange juice. Cook and stir until jelly melts and mixture is smooth.
- Remove balls from baking dish; spoon glaze over ham balls. If desired, garnish with kumquats. Makes 6 servings.
