Jarred sauce makes this sausage, vegetable, and pasta a quick dinner recipe.
Ingredients
- 8 ounces dried fusilli or spaghetti
- 2 tablespoons olive oil or cooking oil
- 1-1/2 ounces Italian bread, torn into small pieces (1-1/2 cups)
- 8 ounces uncooked Italian sweet or hot sausage, or ground beef
- 2 medium green tomatoes, cut into wedges
- 1 medium red onion, coarsely chopped
- 1 medium red, green, or yellow sweet pepper, cut into bite-size pieces
- 1 26-ounce jar pasta sauce with olives
- Cook pasta according to package directions; drain.
- Meanwhile, in a large skillet heat the oil over medium-high heat. Add bread pieces. Cook and stir for 2 to 3 minutes or until bread is toasted. Remove from skillet; set aside.
- Remove casings, if present, from sausages. In the same skillet cook and stir the sausage or ground beef, tomatoes, onion, and pepper over medium heat 6 to 8 minutes or until vegetables are tender and sausage is browned. Drain off fat. Stir in pasta sauce. Cook and stir until heated through. Serve sauce over hot cooked pasta; sprinkle with toasted bread pieces. Makes 4 servings.
