Tapenade Loaf Recipe

Tapenade is a condiment of olives and sweet peppers. Make a batch at home or buy it in the condiment section of grocery stores to make this bread machine recipe.
Ingredients
- 3 cups bread flour
- 2 tablesoons toasted wheat germ
- 1-1/2 teaspoons snipped fresh thyme or 1/2 teaspoon dried thyme, crushed
- 1/2 teaspoon salt
- 1 teaspoon active dry yeast or bread machine yeast
- 1 cup water
- 1/3 cup Homemade Tapenade (see recipe below) or purchased tapenade
- 2 teaspoons honey
- 2 teaspoons olive oil
- Directions
- Add the ingredients to a 1-1/2- or 2-pound bread machine according to the manufacturer's directions. Select the basic white bread cycle and desired color setting. Makes one 1-1/2-pound loaf (16 servings).
- In a food processor bowl combine 1/3 cup purchased roasted red sweet peppers, drained; 1/4 cup pitted ripe olives; 1/4 cup pitted kalamata olives; 1/4 cup pitted green olives; 2 teaspoons olive oil; and 1/2 teaspoon snipped fresh thyme or 1/4 teaspoon dried thyme, crushed. Cover and process with several on-off turns until coarsely chopped. (Or, coarsely chop sweet peppers and olives by hand. Stir in oil and thyme.) Makes about 1 cup.
