You can serve this meatless pizza as a main dish or an appetizer.
Ingredients
- 1/2 of a package active dry yeast (1-1/4 teaspoon)
- 3/4 cup warm water (105 degree F to 115 degree F)
- 1 cup all-purpose flour
- 2/3 cup whole wheat flour
- 1 teaspoon sugar
- 1 teaspoon salt
- 1 tablespoon cooking oil
- 3/4 cup Stilton or blue cheese, crumbled (3 ounces)
- 1 large tart apple, cored and thinly sliced (about 1-1/3 cups)
- 1/2 cup shredded Monterey Jack cheese (2 ounces)
- 1/2 cup chopped walnuts
- 1-1/2 teaspoons snipped fresh rosemary
- Stir yeast into warm water. Let stand 5 minutes to dissolve. In a large bowl stir together all-purpose flour, whole wheat flour, sugar, and salt. Make a well in the center of the dry ingredients. Add the yeast mixture and oil. Stir until combined.
- Turn dough out onto a lightly floured surface. Knead gently about 20 times. Place dough in a greased bowl. Cover and let rise in a warm place until doubled in size (this will take about 45 minutes). Punch down dough.
- Preheat oven to 450 degree F. Grease a 12-inch pizza pan. On a lightly floured surface roll dough to a 13-inch circle. Transfer to prepared pizza pan. Build up edges slightly.
- Bake crust about 10 minutes or until just beginning to brown. Remove from oven. Sprinkle dough with Stilton or blue cheese. Top with apple slices. Sprinkle with Monterey Jack cheese, walnuts, and rosemary.
- Bake for 10 to 12 minutes more or until edges are lightly browned. Cut into wedges. Makes 12 appetizer servings or 8 main-dish servings.
