Sausage Gravy

Ingredients
  • 1 pound pork sausage
  • 1/4 cup all-purpose flour
  • 2 to 2 1/2 cups whole milk
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 1 recipe Virginia's Biscuits (Recipe follows.)
Virginia's Biscuits
  • 5 cups sifted all-purpose flour
  • 1 tablespoon plus 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar
  • 1/2 cup vegetable shortening
  • 1 cup milk
  • 2 tablespoons melted butter
Directions
  • In a large skillet, cook sausage over medium-high heat for approximately 8 to 10 minutes, or until done and crumbled. Remove sausage to a paper-towel-lined plate and keep warm. Drain grease from skillet, reserving 1/4 cup.
  • Return reserved 1/4 cup grease to skillet. Add flour, whisking well to combine. Cook over medium heat for 3 to 4 minutes, or until lightly browned, stirring frequently.
  • Add milk, 1/2 cup at a time, whisking well after each addition. Cook for 3 to 4 minutes after each addition, or until thickened, every time you add another 1/2 cup milk. Add cooked sausage, salt, and pepper.
  • Serve over Virginia's Biscuits.
Virginia's Biscuits
  • Preheat oven to 450 degrees. Spray a baking sheet with nonstick cooking spray. Set aside.
  • In a large bowl, sift together flour, baking powder, salt, and sugar. Using a pastry blender, cut shortening into flour until coarsely blended. Make a well in flour mixture and add milk, stirring until just combined.
  • Turn dough out onto a lightly floured surface. Dust dough with flour and knead lightly 7 or 8 times. Roll dough to a 1-inch thickness. Cut into 2 1/2-inch circles without twisting cutter, rerolling scraps as little as necessary. Place rounds on prepared baking sheet.
  • Bake for 12 minutes, or until golden brown. Brush tops with melted butter.
